  • Cricket flour is gaining in popularity and we’ve been getting more and more requests for recipes. Cricket flour has so many uses so why not start with a crowd pleaser. Here is a recipe for a cricket flour and poppy seed cake with raspberries.

    Make a cake with 1100 crickets

    Cricket flour makes everything more nutritious, and this cake is no exception. We will be using 100 g of cricket flour from our own cricket farm The Cricket Labwhich adds up to roughly 1100 crickets. That means this cake will pack a lot more protein than probably any other cake you ever tasted. Plus it will be a good source of iron, vitamin B12, calcium, and fibre.

    Nutrition info, the whole 2200 g cake:

    Energy – 3600 kcal, protein – 200 g, carbs – 380 g, fats – 390 g

    Nutrition info, a 200 g slice:

    Energy – 327 kcal, protein – 18 g, carbs – 35 g, fats – 36 g

    This cake is the perfect opportunity to help your friends and family discover that insect eating is not something to fear. It’s something that can be really tasty and even healthy (ish), let’s not forget this is still a cake. We hope you like it as much as we did. Let us know how it turned out!

    Ingredients:

    Cake layers

    • 6 eggs
    • 100 g cricket flour
    • 150 g ground poppy seeds
    • 100 ml coconut oil
    • 100 g cane sugar (or your preferred sweetener)
    • 50 ml water
    • baking powder

    Filling

    • 250 g Mascarpone
    • 250 g Ricotta
    • 250 g curd cottage cheese
    • 200 g cream cheese
    • 200 g raspberries (leave some for topping)
    • 200 g cherry jam
    • 50 g cane sugar (or your preferred sweetener)
    • 1 tsp stevia

    Instructions:

    1. Separate the egg yolks from the eggs whites. Whip the whites with cane sugar until they look like snow.
    2. Mix the rest of the “cake layers” ingredients together with the snow until dough is formed.
    3. Bake for about 45 minutes at 180 – 200 °C in a cake form. Check regularly to avoid burning.
    4. Whisk all ingredients for the filling (except raspberries and cherry jam) together and put in a fridge to stiffen up.
    5. Cut the cake into three layers.
    6. Spread cherry jam, the filling, and raspberries on each layer.
    7. Stack the layers on top of each other and decorate with raspberries and toppings of your choice.
    8. Let sit in the fridge overnight and enjoy!
